Vietnamese Pancake - Banh Khot

Banh khot is the perfect snack for those who adores crispy and savory pancake. This little gem is one of the treasures that you will find among the hundreds of delicious Vietnamese cuisines. Banh khot can be loosely translated into several different names – from crispy savory pancakes, coconut rice cakes, kettle cakes, or even prawn pancakes. These distinctly unique translations, however, do not change the texture and crispiness of this bite-sized treat.

Banh khot is considered to be one of the famous Vietnamese snacks that is served with herbs, vegetables, and the famous spicy sweet fish sauce for dipping. The batter for banh khot consists mostly of rice flour, leftover grains of rice, a hint of turmeric for flavoring, which is mixed with coconut milk to create a more creamy and rich texture. The toppings for banh khot will usually be a perfect combination of seasoned shrimp and diced up scallions. However, you may request to have extra coconut milk for toppings to add into the richness of banh khot.

This bite-sized snack can vary depending on the district. As an example, in Mekong Delta, the pancake is slightly thicker and spongier and visibly tinged with turmeric, which is a closer resemblance to the original version. As for the banh khot in Vung Tau, this cuisine more often takes the form of a crunchy and flatter disc-like representation that is topped with shrimp powder instead.

This finger snack is not often heard by anyone prior to visiting Vietnam; it is less unheard of when compared to its close relative, banh xeo, which is thinner and bigger in size than banh khot itself. However, both snacks are to be indulged using similar technique, which is wrapping the pancakes in greens before eating. Banh khot is usually prepared in the same type of griddle as Thailand’s khanom krok, but instead of coming off as sweet in flavour, banh khot is traditionally more savory and commonly paired with the signature Vietnamese cuisine sidekicks – fresh herbs and green vegetables.
